That Was The Food Week That Was!
Post Pop-Up Blues

It's the Saturday morning after the Friday night before and we have what is known as post pop-up blues - a heady mix of complete jet lag and the biggest legal euphoria known to man.
Many, many chefs up-and-down the land will know what we mean when we say that you feel invincible - the buzz that chefs talk about really does exist - it is an addictive hot pot.
It keeps you going throughout the night, nothing can hold you back, you can keep going on and on and on... on and on right up to that point when the last of your customers thank you and depart.
Then looms The Wall - the wall that makes your whole body crash and wish you were scrunched up quickly and thrown into bed fully clothed. There to stay for three days solid. With liquid morphine on tap.
How chefs do this six or seven days a week is beyond me - but then again I do have the hips and back of a 90-year-old. Moving on...
To say that our first pop-up restaurant was a complete success would be pushing it slightly - boy do you learn as you go along. But considering it was the first time in a professional kitchen for one half of team Marsala Rama - it will go down as one of the best nights of our lives.
Thirty one paying punters sat down in the beautiful Provender Deli in South Petherton, Somerset to five courses of seasonal food, with matching wines specially selected by Angela herself.
What you learn very quickly is that time waits for no man or woman - you also quickly learn that not everyone is as relaxed with arrival times as you might be. So when you tell customers to arrive for 7pm, they arrive at 7pm - mass panic ensues.
But once you get going, you do get through it - and get through it we did, without winging it too much (OK, the radish dish was, slightly) but we counted 155 plates out and we counted 155 clean plates back in again. The feedback was fantastic - people wanted recipes, they wanted to book on the next one. All good and so rewarding. We've never, ever had job satisfaction like it.
We are booked in to do another Marsala Rama Pop-Up all over again in a couple of weeks time - and whilst my hips will completely disagree, we can't wait.
