This takes sweetcorn to a different level. The flavour of this simple puree is my favourite new thing! It is delicious served with the Kentucky Fried Rabbit (or Pheasant or Partridge). It is also lovely served with some pan fried plump Scallops and a little bacon...
2 x Corn on the Cob
25gms Unsalted Butter
Chipotle Chilli Flakes
Cook the corn on the cobs in a light chicken stock until tender.
Cut the kernels form the cobs and put into a blender with a little of the stock, the butter and season with salt and pepper.
Blend to a puree.
Pass the mix through a fine sieve to remove any annoying bits that will ruin the mouth feel of this puree and get stuck in your teeth!
Add double cream - to your taste. Reheat on the hob.
Check the seasoning.
Serve with my Kentucky Fried Rabbit, with a few smoky chipotle chilli flakes on top for that extra depth in flavour.
You could also add more stock and cream to turn this into a lovely warming soup!
